1. The core idea: distilling the harvest
Fruit brandy begins with a problem every orchard culture has faced: fruit rots. A tree crops all at once, far faster than anyone can eat it, and before refrigeration the surplus — windfalls, bruised fruit, the tail end of a good year — was destined to spoil within weeks. Fermentation solved half the problem by turning sugar into alcohol and a keepable liquid; distillation solved the rest, concentrating that liquid into a stable, high-proof spirit that lasted indefinitely and was worth more per barrel than the fruit ever was fresh.
Across Normandy, the Black Forest, the Carpathian Basin, and the Balkans, the same logic recurs independently: don't waste the harvest — distill it. 2. Ancient roots: the archaeology of distillation
Distillation as a technology is far older than distilled drinking spirits, and it's important not to conflate the two. The earliest apparatus was used for perfumes, essences, and medicines — not alcohol. 3. From alchemy to alcohol: the alembic
The bridge from perfume-still to spirit-still runs through the alchemists. Zosimos of Panopolis, a 3rd-century Alexandrian, left the earliest known illustration of a still. The word alembic itself traces from Greek ambix into Arabic as al-anbīq. Around the 8th–9th centuries, scholars in the Islamic world — the chemist Jābir ibn Hayyān is the name most often attached — refined the alembic into a precision instrument, chiefly for medicines and essences.
That knowledge reached Europe through the medical school at Salerno, Italy, around 1150, where the first Western documentation of alcohol distillation appears — turning "thick, strong and old black wine" into aqua ardens. 4. The orchard belt: where fruit brandy became culture
By the late Middle Ages, distillation moved out of the apothecary and into the farmhouse across Europe's fruit-growing regions. Two accidents of history gave fruit brandy — especially Calvados — a golden age in the 19th century.
